Hot Italian Sausage Stuffing

2 675-g loaves
sliced white bread, crusts removed
Italian sausages, hot or mild
1/4 cup
onions, finely chopped
2 tsp
dried sage
1 tsp
1/2 tsp
apples, peeled and chopped
1/2 cup
pine nuts, toasted (optional)


  • Preheat oven to 375F. Spread bread on 2 baking sheets. Bake until lightly toasted, 12 min. Cut into 1/2-in. cubes, about 15 cups. Place in a big bowl. Squeeze sausage meat from casings into a large frying pan set over medium heat. Using a fork to keep meat crumbly, cook until no longer pink, 3 min. Add butter, then onions, celery and seasonings. Stir often until onions are soft, 10 min. Add apples for last min of cooking. Remove from heat and add to bread along with nuts. Stir well, pressing hot mixture into bread. Cool before stuffing bird.

Make ahead: Prepare stuffing. Cover and refrigerate overnight.
