Carrot curls with pine nuts

Ingredients

1/4 cup
olive oil
2 tbsp
red-wine vinegar
2 tsp
1/4 tsp

small red onion, thinly sliced into rounds

large carrots, peeled
1/4 cup
Moroccan or kalamata olives, pitted and sliced
1/2 cup
chopped cilantro
1/2 cup
toasted pine nuts

Instructions

  • Whisk oil with vinegar, honey and salt in a large bowl. Stir in onion.
  • Peel long ribbons from carrots, turning after every 3 peels, into bowl with onion. Stir in olives and cilantro. Toss until coated. Sprinkle with pine nuts.
