Spanish Tortilla

dried oregano
1 tsp
1/4 tsp
small red bell pepper, chopped
green onion, thickly sliced
1 cup
chopped ham
1 cup
frozen hash browns
1/2 cup
grated manchengo or cheddar


  • Preheat oven to 350F (180C). Lightly coat an 8-in. (2-L) baking dish with vegetable oil. In a large bowl, whisk eggs with seasonings. Stir in pepper, onion, ham, frozen hash browns and cheese. Turn into baking dish and stir to evenly distribute ingredients. It will look chunky.
  • Bake, uncovered, in centre of oven until centre is set when dish is jiggled, 30 to 40 min. Let stand 5 min, then slice.

This traditional dish ? similar to a crustless quiche ? is loaded with ham and cheese. Even the potatoes are baked in! Try making it with mellow manchego, Spain’s most popular cheese.
